Lentil Soup (recipe from She Shines member LaTara!)

I got this yummy recipe from my friend, LaTara.  We used fresh kale and spinach from our garden.  So good!!  Enjoy. Ingredients:

1 can low sodium broth (chicken or vegetable)

4 cups water

2 cups brown lentils

1 stalk celery chopped

1 small white onion chopped

2 cloves garlic chopped or sliced

1/2 cup chopped carrots

1 tsp cumin

1/2 tsp turmeric

1/2 tsp coriander

dash or two of black pepper

sea salt to taste

1 tbsp brewer’s yeast

2 cups chopped kale and spinach (or one of the other greens)

 

Cooking Directions:

Clean and rinse lentils. Add to pot with broth, water, onions, carrots, celery, seasonings (except yeast and salt). Simmer for about 20 to 30 minutes until lentils are just about soft and add greens. Cook an additional 15 minutes. Add salt to taste and then add yeast last.

 

Serve with a beautiful green salad and sprouted grain bread!
