Black Bean & Collard Green Soup (from She Shines member LaTara!)

This delicious recipe is from She Shines member, LaTara (www.latarahamying.com). 

Perfect for a cold winter's day!

½ bag of black beans

2-3 cups of collards chopped

1 cup frozen corn

2 stalks of celery chopped

1 med yellow onion chopped

1 cup of shredded carrots

2 cans low sodium vegetable broth

4 cups water

½ tsp turmeric

2 tbsp onion powder

1 tbsp oregano

2 tsp chili powder

½ tsp cayenne pepper (less of more if desired)

Sea salt to taste

Directions: 

Put beans, water, broth, and all seasonings into pot of choice. Cook beans for 1 ½ hours and then add greens and onions for additional hour. Add remaining ingredients and cook for additional 30 minutes.
